Dr Oz: Shrimp Scampi Recipe
Doctor Oz did a segment all about Food Swaps like Soy Flour and Almond Flour. The Stella family told Dr Oz that they have a #1 healthy food alternative—spaghetti squash. They use the spaghetti squash in their Anaheim Shrimp Scampi. The secret is to use spaghetti squash in place of the higher fat pasta. Spaghetti squash is low in calories and carbohydrates and is high in fiber. To get it out, simply scrape the sides of the squash with a fork. (It should come out in strings, looking like spaghetti.)
Dr Oz: Anaheim Shrimp Scampi
Ingredients:
- 1 Spaghetti squash
- 6 Tbsp scampi butter
- 1 lb raw shrimp with tails
- 1 Tbsp white wine
- 2 oz crumbled asiago cheese
- 1 Avocado
- Fresh arugula leaves
George got the hot pan going. He melted down some scampi butter. George stated that you could also use regular butter, but scampi butter contains red onions, parsley, and garlic to help give the dish more flavor. He placed the shrimp into the hot pan and cooked it for about 4 minutes. (Dr Oz showed off with his famous skillet flip.) George stated that you could also use other cheeses instead of asiago. He noted that asiago contained a little more fat, but it thickened the dish. Christian dumped the completed dish onto the plate and then placed arugula leaves on top of the shrimp, which provides more color and more taste.
Christian told Dr Oz that they eat this dish at least once a week and they eat it during every holiday in place of the more fattening meals.








What happened to the squash? all I saw was the shrimp cooked.
