Dr Oz Date Bread Pudding

Dr Oz made a Date Bread Pudding with Brown Sugar-Cinnamon Whipped Cream and Apricots in Chamomile Syrup to help you sleep easier.

Gale Gand: Date Bread Pudding Recipe

Ingredients

Date Bread Pudding

4 slices oat (or whole wheat) bread
¾ C milk
1 C light cream
½ split vanilla bean
3 eggs
½ C agave syrup
½ C dates (pit and snip into small pieces)

Brown Sugar-Cinnamon Whipped Cream

½ C heavy cream
1 ½ tsp brown sugar
¼ tsp cinnamon

Apricots in Chamomile Syrup

½ C water
¼ C honey
1 chamomile tea bag
½ C dried apricots (snip into small pieces)

Directions

Preheat the oven to 350°F
Cut the bread into 1-inch cubes (You should have about or 2 C of cubes)
Spread onto a baking sheet and toast in the oven for 10 minutes (or until light golden brown) Pour into an 8×8 baking pan
Use scissors to snip the dates into small pieces
Mix the small pieces of dates into the bread cubes
Heat the milk, light cream and vanilla bean to a simmer in a saucepan
Turn off the heat and let infuse 10 minutes
Whisk the eggs and agave together in a bowl
Whisk in the warmed milk/light cream mixture
Pour mixtures over the toasted bread cubes. Let soak until absorbed and chilled (about 1 hour—overnight is even better)
For a water bath, place the pan in a larger pan filled with 1-inch hot water
Bake until set and golden brown on top (about 40 to 45 minutes)
Serve warm or chilled with a dollop of cinnamon-brown sugar whipped cream and spoonfuls of the apricots in chamomile syrup

**To make the whipped cream, whip the cream with the brown sugar and orange rind till loose peaks form.

**To make the chamomile syrup bring the water and honey to a boil in a small saucepan. Add the tea bags and the snipped apricots and simmer. (about 3 minutes). Cool and remove the tea bags. Keep chilled until ready to serve.
